Zucchini is one of my all-time favorite vegetables. It’s good in so many dishes (both sweet and savory!). It’s equally delicious fried up as an appetizer as it is grated into tender zucchini bread. But when summer is at its peak and zucchini are bountiful, zucchini lasagna just might be my favorite way to use up this seasonal veggie.
