Ron Hsu’s Carbonara with Szechuan Peppercorns, Bacon, and Ramen Noodles

I know that may be a bit “basic,” but it’s such a comforting pasta dish that reminds me of my mom’s cooking — it’s one of those dishes she can just nail every time. Of course, people say, “if it ain’t broke don’t fix it,” but that doesn’t mean I’m not open to some unique interpretations or upgrades. Which is why I immediately jumped at the chance to re-create a Chinese American spin on carbonara.
