While others may gravitate toward a classic coleslaw at a potluck or outdoor gathering, I’m firmly a potato salad person, whether it’s one with hard-boiled eggs or a lemon-y Greek version. Red potatoes are some of my favorite potatoes to use in a salad because they have a firmer texture that doesn’t fall apart easily, and that pop of red color from the skin is so pretty (plus, I don’t have to do any peeling!).
