I am a soup enthusiast. As soon as the weather starts to turn, my Dutch oven comes out and doesn’t go away again until May. I love all kinds of soup, and will happily simmer a pot for hours on end to get the coveted depth of flavor that can only truly be achieved via a layering of ingredients, including the most elusive one of all: time.
