A solid frozen pizza is often my go-to on nights when I can’t be bothered to do more than turn on the oven and let it do its thing. In a household of one, a large pizza is too much for just me, which is where personal pizzas come in.
Growing up, I ate LOTS of them. One of the few things I could “cook” as a kid, they made the afternoon homework grind a bit more bearable. TBH, many were quite average and tailored towards child-friendly palates. Not these new ones from Amy’s Kitchen. The company just introduced a brand new range of personal pizzas in three flavors. If I had any one of the Cheese, Margherita, or Veggie Combo pizzas back then, I would have been over-the-moon excited.
Amy’s Kitchen was founded nearly 40 years ago in 1987 in Petaluma, California, by Andy and Rachel Berlinder after they struggled to find delicious organic and vegetarian meals in the grocery store while Rachel was pregnant with their daughter, Amy (hence the name). Fast-forward to today: The company has a wide range of frozen meals, including pizzas, pot pies, frozen dinners, and more. All are certified organic, non-GMO, and made without synthetic preservatives and artificial colors or flavors.
The new personal pizzas, which just launched in October, are miniature versions of the standard pizzas the company’s been selling for years. The crusts are hand-stretched and contain organic unbleached wheat flour, filtered water, organic extra virgin olive oil, yeast, and salt.
I heated up my personal pizza in the air fryer, as recommended on the box, for six minutes at 400°F, and all the elements came out just right. (You can also cook it in the oven, toaster oven, or microwave if you prefer.) The crust was relatively thin as well, not overly doughy, while the edges remained crunchy and chewy (just how I like it). It reminded me of the ones I order at nearby New York pizzerias.
The sauce was robust and flavorful, and I could really taste the fresh tomatoes, garlic, and basil. The blend of cheeses melted nicely and gave it that salty bite. It took me back to a classic Italian pizza shop that my family frequents by the beach during the summer. I’ll definitely be picking up a few more on my next grocery run.
